2 cups gluten free flour
1 tsp baking powder
2 tsp cinnamon
4 tsp nutmeg
1/2 tsp salt
1 cup margarine
1/2 cup white sugar
1/2 cup brown sugar
3 cups icing sugar
3 eggs
1/2 cup cut red cherries
1/2 cup green cherries
1/2 cup dark raisins
1/2 cup sultanas
1/2 cup ground almonds
1 cup zested orange
1 cup fresh orange juice
1/2 tsp vanilla extract
1/4 tsp almond extract
1/4 cup lactose free milk


Baking Instructions:

In a bowl, cream the butter and sugar. Then add eggs one at a time and mix until smooth. Sprinkle in all the other ingredients one at a time mixing well with each addition. Pre-heat oven to 325 degrees fahrenheit. Grease the baking tin and pour the mixture halfway through into the baking tins and spread evenly. Bake for 60 – 90 minutes and reduce the oven temperature to 300 degrees Fahrenheit after the first 45 minutes. Allow to cool before turning it into the wire rack.

Frosting Instructions:
Add 1/2 cup margarine, 1/2 tsp orange peel and 3 tsp orange juice in medium bowl. Gradually beat in 3 cups of icing sugar and beat until light and fluffy. Decorate cake as desired or serve frosting on the side.
